You may not be familiar with coconut butter but this Latin recipe is so easy to make, and a great alternative to peanut butter if you have allergies. I love mine slightly salted on toast in the mornings but it also tastes great on rye bread or in a smoothie.
You simply blend the desiccated coconut (as you would peanuts for peanut butter) in a Food Processor et voila!
